Pumpkin Bread

We haven't made this yet because we don't have an oven...yet.  Still, it looks good.  Let me know how it is if you ever try it.

Pumpkin Bread

2/3 cup margarine
1 tsp. cinnamon
2 2/3 cups sugar
1 1/2 tsp. salt
4 eggs
1/2 tsp. baking powder
2 cups pumpkin (boil until cooked through, mash)
1 tsp. ground cloves
3 1/3 cups flour
2/3 cup chopped nuts (optional)
2 tsp. baking soda
2/3 cup raisins (optional)

1. Heat oven to 350 degrees (not important with propane ovens, when you have made the bread just put it in the pans, turn on the oven and put them in.)

2. Grease bottom only of 2 loaf pans (cookie tins work fine)

3. Mix shortening and sugar in bowl. Add eggs and pumpkin.

4. Blend in flour, soda, salt, powder, cinnamon and cloves.

5. Stir in nuts and raisins. Pour into Pans.

6. Bake until toothpick comes out clean, about 1 hour and 10 minutes (with the ovens here check it after 45 minutes, probably takes about an hour; in a box oven it takes about an hour and a half). Let cool slightly and remove from pans.

8. Wrap and store in the fridge (if you are fortunate to have one, if not, store in sealed container.

Ok So I was reading on the babycenter.com about having twins and it said that eating yams (or cassava root)can increase your chance of having twins. I thought to myself didn't Alyssa have a post about making cassava root a staple in their kitchen?? Hmm, we just had our little baby boy Aaron last week and here I am thinking about twins! Much to Kents dismay. LOL!! Wishing you guys the best and hoping the family planning holds up to the cassava root...(maybe you can ship me some???)
