These are Paul's personal favorite. Everytime we get pumpkin he wants to make pumpkin cookies. They're amazing. We've added more pumpkin and oats to make them healthier and they still taste amazing.
Now, we don't have an oven, so I "bake" the cookies on a tawa and cover the tawa with a kahari to keep the heat in. See the photo below:
Pumpkin Cookies
2 cups flour
1 cup oats
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 cup butter or margarine
1 cup brown sugar, firmly packed
1/2 cup white sugar
1 egg
1/2 tsp. vanilla
1 cup pumpkin, pureed
1 cup raisins (optional)
1/2 cup chopped walnuts (optional)
1. Preheat oven to 350 degrees F. Grease a cookie sheet.
2. In a mixing bowl, combine flour, oats, baking soda, cinnamon, and salt. Stir.
3. In another bowl, cream butter and both sugars with a wooden spoon until smooth. Add egg and vanilla. Beat until smooth.
4. Add 1/2 cup of the flour mixture and then 1/4 cup of the pumpkin puree. Stir. Repeat until all the flour and puree have been added.
5. Stir in raisins and walnuts until blended.
6. Drop by the tablespoon onto cookie sheet 1 inch apart. Bake for 12-15 minutes or until golden.
